Core i5

Sweet spot gaming processor, quad core in desktops means this performs very well in games, also good for some reasonable multitasking, watching HD videos, this processor can handle a lot.

Core i7

The productivity processor, if you’re going to do Photoshop, video editing, compression then the hyper threading will come in use. IF you’re just gaming, get the i5 and spend the extra money on a better Graphics Card.

Core i7 6 core

These i7s are on a completely different motherboard platform, these allow for much more RAM and PCI-E slots. If you want the best of the best for gaming for multiple Graphics Cards or use productivity software where the extra power will help, use this. They’re very expensive so it really depends if you actually need this to save time for money.
